Before you go on vacation, you must ask yourself what the main purpose of your vacation is. If it's relaxation, you must forget about responsibilities and simply let yourself go with the flow. Of course, you have to take care of the flight schedule and the accommodation reservations. But other than that, you should forget about schedules.

Don't pressure yourself by planning the itinerary up to the last detail and up to the last minute. Instead, give yourself some air to breath. You can list a couple of things to do but don't set a definite schedule for it. At least, when you stop and wonder what you will do next you already have a shortlist. Still be flexible and feel free to wander or laze around without purpose or direction for a day. It's your gift to yourself and you'd be thankful you did it after your vacation. This is the only way that you can be free from the usual stresses of your life.

You are not at work so there's no reason why you need to hurry or follow a strict schedule. Follow where your foot takes you and do the things that your mood tells you instead. This would surely lead you to a more enjoyable vacation. Without any expectations, you will be contented of what you get. Control is not the focus of your trip. It's relaxation, after all.
